No Bake Energy Bites {RECIPE}

Although I know how crucial eating breakfast is, at the hour of the morning that I typically have to be out the door, it is hard to find time to sit down and eat a fulfilling and healthy breakfast so I typically skip it. I have found though that smoothies or juices are easy for me to grab with the plus side of them being healthy but I wanted something more. I found this recipe on Pinterest and decided to try it out! Since this trial, I have also come up with a few variations that I will include at the end!






































What You Will Need
1 cup steel cut oats
1/2 cup ground flax seed
1/2 cup peanut butter
1/2 dark chocolate chips
2/3 cup toasted coconut flakes
1/2 cup honey
1 tbsp chia seeds
1 tsp vanilla







































What You Will Do
-Place all ingredients into a mixing bowl and mix well.





































-Cover and chill for an hour until firm
-Remove from fridge and form into bite sized balls (my batch came out to 40)





































-Place in an airtight container. Good for 7 days.






































Variations
Nutella Bites: sub the peanut butter for 1/2 cup of Nutella and add 1/3 cup ground hazelnuts
Butterscotch Chocolate: sub the peanut butter for butterscotch chips
Trail Mix: add crasins and ground pretzel pieces.
