Skinny Banana Nut Muffins {Recipe}

I am all about a quick and easy breakfast..quite honestly, if it isn't already made, I typically skip out. I have never been one for a big bacon, egg, pancake breakfast. I much more prefer a bowl of granola, fruit or a bagel. Seeing as how I am changing my lifestyle to be healthier, I thought that I would include some easy and fast breakfast recipes into my routine. 

Applesauce Banana Nut Muffins
What you will need:
  • 2 ripe bananas
  • 1/2 cup sugar
  • 1/4 cup applesauce
  • 1 cup white whole wheat flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/4 cup walnuts

What you will do:
-Preheat oven to 350 degrees F. Mash bananas and mix in sugar. Stir in the remaining ingredients, until the flour is just incorporated. 

-Pour batter into prepared muffin tins and bake for approximately twenty minutes, until a toothpick comes out clean.

-To make these healthier use stevia or truvia instead of plain granulated sugar. Use two egg whites instead of one egg. 
-To make these more savory/sweet use 1/4 cup white sugar and 1/4 cup brown sugar. use 1/3 cup of butter instead of applesauce and add 1/2 cup of chocolate chips.
