Asian inspired dishes are a staple in our household. We have a serious love affair with Chinese take out but, that isn't necessarily the healthiest option so, I like to make homemade Chinese
occasionally weekly. Asian inspired meals are SO quick and easy and typically one use one pan/pot so, winning.
I am not going to lie, I was all over the place with this recipe. I started out thinking I wanted to do just a regular orange chicken spin off (minus the fried part) then I looked in the fridge and saw broccoli so I also added that then I asked J what he was feeling for spice and he said he was open to it so there went in the Sriracha... basically what I am getting at is I stood in the kitchen and just concocted. Because of this, the ingredient picture is so not accurate..#bloggerfail but I am not perfect!
What You Will Need
-1-1 1/2 lbs of chicken cutlets cut into bite sized pieces
-1 1/2 cups of broccoli finely cut
-1/2 of a sweet onion chopped
-3 garlic cloves minced
-1/2 cup of orange marmalade
-1/3 cup of sweet chili sauce
-2 tablespoons of hoisin sauce
-2 tablespoons of soy sauce
-1 tablespoon of dijon mustard
-a splash of orange juice
-salt and pepper to taste
-ground ginger to taste
-red pepper flakes to taste
-Sriracha to taste
-yum yum sauce (for serving)
What You Will Do
-in a large pan, add olive oil and saute onions and garlic on a medium-high heat.
-once onions are tender, add chicken. sprinkle with salt, pepper, and ginger. allow chicken to brown on all sides.
-meanwhile combine all other ingredients (minus broccoli) and pour into pan.
-bring to a boil and stir constantly for 1 minute.
-turn down to a low-medium heat and add broccoli.
-simmer for 8-10 minutes.
serve over rice, noodles or by itself!
