Baked Blueberry Oatmeal Cups [Recipe]


Breakfast is such a hotmess around these parts. I really have been trying to set a goal to eat breakfast at least three times a week-I know that isn't a lot but it is better than nothing. Anyways, I like things that are quick and easy. Premade breakfasts are my jam but sometimes they aren't tasty so I bring you these little gems of deliciousness. 

What You Will Need
-2 cups uncooked steel cut oats
-2 cups mashed banana (you want over ripe bananas for this) 
-3/4 cup frozen blueberries
-1/2 cup brown sugar
-2 eggs
-2 tsp baking powder
-2 tsp vanilla

What You Will Do
1. preheat oven to 350 and prep a muffin pan
2. add bananas, oats, vanilla, eggs, and baking powder to a bowl. stir well to combine
3. gently fold in blueberries
4. using an ice cream scoop, fill muffin tin-you can fill pretty high as these do not rise too much
5. bake for 18-20 minutes or until a toothpick comes out clean
6. enjoy!

  4. Girl I am right there with ya on the breakfast. When I was in high school and college I never ate breakfast. Now I usually just make some cheese toast and I am out the door! There would be super tasty though! I have also found some breakfast burritos on pinterest I may try!

  7. These look so yummy! I totally agree about breakfast. I always opt for pre-made frozen breakfast like waffles and such especially for my son because it's just easy, but I really should make things like this and freeze them or store them for the week. As usual babe, you've inspired me to be better :)
