Skillet Chicken Parmesan [Recipe]

I am such a sucker for one pot/pan meals. There is just no excuse to not cook when it is that easy. One of our favorite meals is Chicken Parm but if you have ever made it, you know what a pain in the ass it is to make. You have to do an egg wash then the breading then the frying then in the oven-it is just too much. Anyways, I thought I had died and gone to heaven when I came across this recipe for a one skillet chicken parmesan. I changed things around a bit just to make it that must easier! 

What You Will Need

-1 1/2 lbs chicken cutlets cubed into bite sized pieces
-1 box of pasta-your choice
-4 cups chicken broth
-1 jar of pasta sauce 
-1 can diced tomatoes
-2 cups shredded mozzarella
-1 cup panko bread crumbs
-4 cloves of garlic
-1 1/2 tbsp olive oil
-1 1/2 tbsp italian seasoning

What You Will Do
1. pre heat oven to 350 and heat olive oil in skillet over medium heat
2. add chicken and cook throughly then remove
3. add chicken broth to skillet and heat until boiling
4. add pasta and cook until it is just over al dente
5. once noodles are cooked, add in the garlic, 1 tsp of the italian seasoning, drained diced tomatoes, and chicken then stir
6. remove from heat and top with mozzerella
7. toss breadcrumbs with the remainder of the italian seasoning
8. drizzle a touch of olive oil over the top and place in oven for 10 minutes or until cheese is melted and breadcrumbs are golden

serve with garlic bread and side salad and enjoy!
